Ok I realize it's a pretty simple concept but I think I was just not using a long enough belt.
For dinner I wanted something fast and light. I broiled some salmon and made a quick tomato sauce with sautéed tomatoes, garlic, balsamic and seasonings. On the side I cut a microwaved sweet potato into medallions and dressed some red leaf lettuce to make a side salad.
I also made a huge win at work this morning! I re-used the concept of the "bento box" that's all the rage at Starbucks right now to make a healthy "to-go-box" for one of our locations. It was a huge hit with the client!

i love the belt look, but for some reason, i get annoyed with anything tied around my waist. sometimes i endure it in the name of fashion, however. ;)
