I had a gourmet lunch in a flash this week all thanks to a bit of forethought a few weeks ago!
We had this awesome salmon for dinner and before we could devour all the leftovers I put a bit aside in the freezer. I sure thanked my past self this week!
A quick lunch in a few minutes.
I paired the salmon, roasted potatoes and brussels sprouts with a pasta salad I made from the leftover noodles from my "everything you've got" pasta bowl dinner.

Oh yum! This is something I really should get better at doing, because when I make something I either eat it all or chuck it away after and it's so wasteful! xx
