Something new with blue

My lovely blue dress from a Montreal shopping spree 2 years ago is still getting use! Today I went a bit crazy with colour and pattern... actually I'm not even sure if I liked it that much. But you never know until you try!

10 Minute Whole Grain Rice

I love whole grain rice- so full of natural flavour and texture. What I hate about it? How long it takes to cook! In fact, I hardly ever make it because of that reason. But last night while doing the groceries, I found this product. For $5.00 I figured I'd give it a try.

The verdict? It took a bit longer than 10 minutes; 15 minutes in the end and there was a bit of water still left. The texture was chewy and it lacked the flavour I was used to. But all in all, for a quick and healthy rice fix it was convenient!

To serve with the rice I made some Baked Tilapia. Here's how I did it:

On my Stoneware Barpan I put 4 fillets of the Tilapia seasoned with olive oil, salt, pepper, Italian seasoning, and a spread to Dijon Mustard. In a frying pan I cooked a handful of slices mushrooms, minced garlic, salt pepper, sundried tomatoes, artichoke hearts and spinach.

I topped the fillets with the mushroom mixture and baked for 15 minutes at 375 degrees Fahrenheit.

While the fish cooked I made the "10 minute rice" (aka 15 minute rice).

Such a quick and tasty meal for around 500 calories!

  2. Actually, volunteering was canceled so when I got home I changed right into my work out gear to make sure I made it to the gym! If not I probably would have watched tv and blogged all night... Can't wait to see you this weekend!
