contrasting weekend breakfasts

On Saturday morning I had a huge workout planned and didn't want to be weighed down by a big breakfast. I made myself a fabulous fruit smoothie with all the fun ingredients we got from our grocery shop the night before- frozen mango and strawberry, milk and strawberry Activia yogurt.

Sunday was a bit of a different story. After a late night we wanted something a bit more substantial. With a lot of our leftovers I made some "Spanish Eggs"- poached eggs on a salsa, sauteed mushroom and avocado mixture. So flavourful and filling, but not too heavy.

Not to mention pretty!

  1. I am totally on the same page...I love smoothies and a big, delicious egg and mushroom breakfast! SO different yet both SO good!!!
