Wednesday night's Baked Salmon with Mango Salsa was wonderful, but it was to die for in sandwich form (of course!).
It was so moist that it only need a couple of tablespoons of mayo for
two large sandwiches. I added the leftover salsa for a extra kick!
Topped with lettuce and tomato on a multigrain panini it was the perfect
lunch!
