I woke up Sunday morning to a sunny kitchen and really wanted to bake!
I settled on a baked oatmeal that really turned out perfectly!
It's so simple! All my oatmeal bakes are based on this basic recipe. I improvised by using frozen strawberries and mango. I also added some unsweetened coconut.
I served it with vanilla yogurt and a drizzle of Maple Syrup.
Sunny kitchens always inspire the best breakfasts!
