pre race day

I had a glorious 9 hours of sleep on Thursday night and woke up refreshed!

I quickly ate a tasty breakfast and got ready for my work day.

Dark Chocolate and Strawberry Overnight Oats:

1/2 cup oats, 1/2 cup dark chocolate almond beverage, 100g low fat strawberry yogurt, 1/2 banana, 2 sliced strawberries. 

I'm really getting good use out of these shorts this summer!


After meetings I enjoyed a tasty lunch!


Ham and cheese panini with lots of hot peppers and a simple strawberry, mushroom and almond salad with balsamic vinegar and olive oil.


For dinner we loaded up on a low fat, high energy dinner. Turkey Sausages and Quinoa Vegetable Salad.
