red beet hummus

Happy Monday!


A few weeks ago I found a can of beets in our cupboard and set out to make some tasty hummus with it. Check out the gorgeous colour!


Red Beet Hummus

1 can chick peas (drained and rinsed)
1 can beets (or use fresh and roast them first!)
juice and zest from one lemon
1 tbsp tahini 
1 pinch (or to taste) salt
1 - 2 cloves garlic

Blend in a blender until very smooth! It will need some added moisture so use some beet juice or olive oil if you want. I keep mine for about 5-6 days in the fridge. 

Serve with lots of veggies and some crackers or chips. 


It makes a great spread for veggies sandwiches!
