mushroom broccoli quiche

I had one of those awesome stay at home and do whatever weekends this past weekend and I came up with these lovely quiches for our lunch on Sunday. 


I started with my favourite "crust" out of grated potatoes. I used two large white potatoes, grated, 1 egg, salt, pepper, thyme and 2 tbsp whole wheat flour. I baked them at 350 degrees celcius for about 15 minutes or until they were browned on top.


Next I spread 1 tbsp chive cream cheese on each crust, topped it with lightly sauteed onions, mushrooms and broccoli.


Next I poured on a mixture of 3 eggs, 1/4 cup skim milk, salt, pepper and 1/2 cup grated mozzarella. I baked them for 15-20 minutes until the egg was set.


 Served for lunch with a salad or veggies it's the perfect meal! I packaged the rest for lunches.

      I got them at Think Kitchen in the Ottawa Train Yards. They're a great store for kitchen gadgets.
