something fishy

We enjoyed fish twice for dinner this week! Fish is SO great for you! Full of lean protein and healthy fats.

We had fun with cod and trout and here's how:

For the trout we were going to put it on the BBQ, but at the last minute we ran out of fuel so into the frying pan it went with some seasoning.


On the side I made some couscous and mixed in toasted sunflower seeds, dried cranberries, sautéed onions and spinach, salt, pepper and a dash of olive oil. I served a big scoop of it on a halved avocado.


For the Cod we used the same pan fry method but added a kick to the flavour with hot pepper flakes.


We served it up on a whole grain bun with a creamy coleslaw.


On the side I made a quick Greek Salad with tasty baby cucumbers, lettuce, spinach, tomatoes, olives and feta dressing.


There you go! Two great ways to have fish for dinner!
