leftovers for lunch

Happy Friday everyone! I want to inspire you to use leftovers for quick lunch fixes today.

I had a gourmet lunch in a flash this week all thanks to a bit of forethought a few weeks ago!

We had this awesome salmon for dinner and before we could devour all the leftovers I put a bit aside in the freezer. I sure thanked my past self this week!


A quick lunch in a few minutes. 

I paired the salmon, roasted potatoes and brussels sprouts with a pasta salad I made from the leftover noodles from my "everything  you've got" pasta bowl dinner.

salmon with mango salsa

I passed by the fresh fish counter last night and had a huge craving for the gorgeous salmon filets.

I picked a nice thick one. While it baked in the oven with salt, pepper, garlic and olive oil, I mixed together a fresh mango salsa to top it with. I cubed the mango and added cilantro, olive oil, salt, pepper, lime juice and jalapeno. 
 

I placed the prettiest sliced of fish on a bed of red leaf lettuce and topped it with the salsa, being sure to drizzle the drippings over the whole dish. It was perfection!


 I finished the meal off with a tasty snack! Peanut butter, banana slices and vector cereal crumbs. A great way to use the bottom of the cereal bag up!
