It started as cubes in mexican dishes or slices in sushi, then I graduated to guacamole in tacos, burgers, burritos and as a dip, now it's come to a spread on bread! I'm hooked.

Simple Pleasures Avocado Sandwich
serves one
1 Ripe Avocado
1 tsp fresh lemon juice
1 tsp olive oil
salt and pepper to taste
Mash avocado in bowl and add seasoning to taste. Spread on toasted whole grain bun, bread or pita. Enjoy with veggies or a salad or as a tasty appetizer for a summer party!
