Jambalaya

Dinner was such a success tonight that I had to share it!

Emilie's Sausage and Shrimp Jambalaya

Sauté in 2 tsp olive oil:
1 clove garlic, chopped
2 sprigs green onion, chopped
1/2 green pepper, chopped
1/2 zucchini halved lengthwise and sliced

Add and cook for 3 minutes:
3 sausages, sliced (I used turkey sausage, but the traditional spicy chorizo sausage would have been equally as tasty)
1 can tomato paste
salt, pepper, red pepper flakes, cajun seasoning and cumin to taste
2 cups 5 grain rice

Add:
4 cups of chicken stock

Simmer until rice is done (about 45 minutes)
Add 2 cups uncooked shrimp in last 5 minutes

Serve!

It makes 4 large servings at about 600 calories each. Healthy, filling, and tasty! Can't beat that!
