I wasn't feeling too hot a few nights ago. I did what I always do when I feel that way- eat soup!
I made a very tasty Lentil and Sweet Potato Soup with spinach, carrots and a can of diced tomatoes.
For lunch on Friday I warmed up a bowl of soup and served it with a fabulous panini sandwich! I used 12 grain bread, a smear of goat cheese, some tapanade, ham, spinach, basil and artichoke hearts. It was a perfect combo!
After a hard workout at the gym I rushed home to make something tasty for dinner! I threw together a shrimp and veggie stir fry!
I'm off to enjoy a fun Saturday with the BF!
