dinner party wars

Have you seen Dinner Party Wars? It's so much fun! I would try to be on it if it was a bit more about a fun night out and not about "who is better than who". But that makes good TV!

For our dinner party this past weekend we went for simple but flavourful!
We started with some homemade cilantro hummus and colourful veggies!

Also on the table was my very own creation: Roasted Cauliflower and Garlic Spread. I really wanted a dip with roasted cauliflower but didn't find any recipes online. I just winged it. Here's what I did:

Roast 1 chopped head of cauliflower with 2 cloves garlic, 1/4 cup chopped onion, salt, pepper and olive oil at 400 degrees Fahrenheit for about 45 minutes. When cooled put in a food processor with 1/4 cup grated Parmesan cheese, a squeeze of fresh lemon juice, a drizzle of olive oil and a small handful of fresh parsley.

The final result is a spread that is packed full of amazing flavour! I served it alongside some whole grain crustini.

For the main with had Hot Italian Sandwiches with a lovely mixed green salad.

Last, but certainly not least where Aunt Theresa's Brownies! Gooey and chocolatey. The perfect end to the meal.

See? Happy dinner parties are the best kind! Take that Dinner Party Wars!
