mexican two ways

It's so easy to keep Mexican ingredients on hand. You can do so much with them too.


We used these ingredients to make two dishes this weekend. 

black beans
salsa
sour cream
tortillas
hot peppers
spinach
peppers
avocado
lime
chicken
ham
cilantro
cheddar cheese
cumin
chili powder
various hot sauces

Our first dish was a bit of a burrito/taco type wrap. We made guacamole with the avocado, cilantro and lime. The BF cooked up some tasty chicken  and we had a table full of various toppings from the items listed above.


Sunday night, I made a mexican pizza with loads of toppings. I used salsa for the tomato sauce and put it under the broiler, on low, for a few minutes to get the cheese bubbly and melted.
 

The best part? Loads of flavour and playing with spice intensity! Yum!
