Spicy Pork Panini with Broccoli Salad

When does a week go by without a panini in our house? I'm not sure it's happened before!

This Spicy Pork Panini was full of great stuff! The BF sliced some leftover pork chops from our dinner the night before and then we teamed together to layer on sautéed onions, mushrooms and spinach with chili flakes. Then we topped it with spicy BBQ sauce, tomato slices and cheddar cheese. 


On the side we had a healthy version of one of my all time favourite salads!


I used this recipe for inspiration.

Yogurty Broccoli Salad


4 cups fresh broccoli florets
1/4 cup sweet onion, finely diced
small handful of dried cranberries
small handful of dry roasted sunflower seeds
1/4 cup plain yogurt (I used 2%)
juice from 1/2 lemon 
2 tablespoons fat-free mayonnaise
small handful soy based "bacon" bits
salt and pepper to taste

Toss ingredients together and chill until serving time.

YUM! Another easy hot weather meal!
